鬼おろしです。
刃の部分が鬼の歯みたいですよね。
鬼おろしは熱伝導率が低く、粗くすりおろす為、水分や食物繊維が逃さずにおろせます。
ふんわりしながら歯ごたえも残せますので、同じ大根を使っても普通の金型ですりおろした時と味が違います。
普通の金型の場合、水分と辛味が出てしまいますが、鬼おろしの場合甘みを含んだ大根おろしになります。
料理屋さんで使われている道具ですね。
