とにかく寿司へのこだわりが強く、寿司の世界では変態と呼ばれているそうです。
ネタに何重もの切り込みを入れ、どの角度で何回切ると美味しいかを
顕微鏡を使って調べたり、熟成期間がどれくらいが一番美味しいのかを
確かめる為にお腹を壊したりと自ら研究をしている方です。

どれくらい美味しいのか期待をしてお店に行きましたが、
期待を裏切ることはありませんでした。
本当に美味しいです。

味はもちろん食感や香りが楽しめました。
1つ1つの料理にこだわりがありました。
特に寿司はとろけるような味わいが堪能できます。
それでも皮はパリパリに焼かれて絶妙な歯ごたえがあります。
また口の中に入れてから香りが楽しめました。

極めるということはこういうことを言うのでしょう。

当店も器を極め、器の世界で変態と言われるよう日々研究を重ね、
お客様へ常に満足してもらえるよう頑張っていきたいと思います。
