昨夜は閉店後買い出しに行き、その後お客様のお店へお邪魔してきました。

常にたくさんのお客さんがいる大人気の海鮮料理屋でしたが、今回の目的はそのお店の奥にあるお寿司屋さんです。
同じ部屋にはなりますが暖簾で隔たれ、高級感あるカウンターが並んでいました。
ちなみに今回はTwitterで知り合った料理学校に通い、将来台湾でお店を出すという夢を持っている方も同行しました。
そのおかげで料理についての奥深さがとても勉強になりました。
毎回”美味しい”しか言わない私ですが、料理人の仕込みや工夫、考え方等料理を頂く際の新しい視野が広がりました。
例えば蒸し碗を出す時に蓋部分を変えて熱くならないような気遣いやわさびを擦る方向での美味しさ向上、75～80度の温度調節でのこだわりの仕込み、器の色で料理の流れをリセットしたりとほんとどこまで気を使っているのだろうかと思うと底が見えません。
料理の出す順番も考えられ、その上質問をすれば即座に返答される食材のこだわりや知識も素晴らしかったです。
朝仕入れを行い、そこから何時間もかけて仕込みをし、そしてお客様へ料理を提供する。
本当に大変なことだと思います。
今まで単純に”美味しい”しか思わなかった自分が恥ずかしくなりました。
お店の方の師匠の言葉ですが「心は形を表す」という通り、手を抜くとすぐに料理に出るそうです。
だからちょっとしたことでも手が抜けないと言われておりました。
料理は本当に奥が深い！
そんな料理屋さんのお手伝いが出来て、一不二として幸せな限りです。
もちろん料理屋さんだけでなく、ご家庭でも言えることだと思います。
料理は愛情、といいますが、一手間加えるだけで味が変わりますからね。
最高の料理となる為に最高の器を添えたいものです。

ちなみに、当店は和食器屋ではありますが、調理道具の手配可能です。

Thanks to that, the depth of cooking has become a great learning experience.
Although I say only “delicious” every time, new perspectives when cooking chefs’ preparation, ingenuity, way of thinking, etc. are gotten widened.

这是一个受欢迎的海鲜餐厅，随时都有很多客户，但这次的目的是在商店后面的寿司店。
这是在同一个房间，但是由善意分开，豪华柜台排队。
顺便说一下，这次我参加了一个在Twitter上遇到的烹饪学校，并陪同一位有梦想在未来在台湾购物的人。
由此，烹饪的深度已经成为一个伟大的学习经验。
虽然每次只说“美味”，但烹饪厨师的准备，聪明才智，思维方式等方面的新观点得到了扩大。
