【新商品】ジョカ（焼酎の熱燗用酒器）

今日の新商品はこちら。

ジョカです。

こちらは熱燗にする時の酒器です。
元々は鹿児島県の酒器「チョカ」から来ているようです。

焼酎とお湯を6：4で混ぜ、一日置いたものをジョカに入れ、弱火で直接火をかけ、人肌程度に温めると最高に美味しいそうです。
湯煎や電子レンジですと味が悪くなるそうです。

しかもジョカは飲み終わった後洗いません。
焼酎の味が染み込むようにするためです。

食器を育てる楽しみがあるジョカはどうですか？
焼酎に興味がある方にぜひおすすめします。

【新商品】常滑焼の湯冷まし（陶芸家作品含む）

今日の新商品はこちら。

常滑焼の湯冷ましです。

湯冷ましを使うと、お湯の温度が10℃下がると言われております。
それによってお茶を飲みやすくすることができます。
料理屋さんはこういうところはもちろん、湯呑みの持ち方や熱の伝わり方まで考えて湯呑みを選ばれています。
適温のお茶が出てくるお店は良いお店ということですね。

ちなみに当店に湯冷ましは今まで2種類ありましたが、今回銀座の高級寿司店様からの要望を頂き、3種類追加しました。
元々数はあまりおいておりませんのでもし気になる方がおりましたら、事前にメッセージをして頂けると助かります。

 

1つ目の写真の湯冷ましは作家作品です。
同じ種類の急須は以前からありましたが、今回は湯冷ましを追加しました。
こちらの商品はとても軽いです。

 

これから冬にかけてお茶を飲む機会が増えてくると思います。
ちょっとした飲みやすさを考えて選んでみてはどうでしょうか。

【お客様のご紹介】錦糸町　高はし

昨夜は閉店後買い出しに行き、その後お客様のお店へお邪魔してきました。

常にたくさんのお客さんがいる大人気の海鮮料理屋でしたが、今回の目的はそのお店の奥にあるお寿司屋さんです。
同じ部屋にはなりますが暖簾で隔たれ、高級感あるカウンターが並んでいました。

ちなみに今回はTwitterで知り合った料理学校に通い、将来台湾でお店を出すという夢を持っている方も同行しました。
そのおかげで料理についての奥深さがとても勉強になりました。

毎回”美味しい”しか言わない私ですが、料理人の仕込みや工夫、考え方等料理を頂く際の新しい視野が広がりました。
例えば蒸し碗を出す時に蓋部分を変えて熱くならないような気遣いやわさびを擦る方向での美味しさ向上、75～80度の温度調節でのこだわりの仕込み、器の色で料理の流れをリセットしたりとほんとどこまで気を使っているのだろうかと思うと底が見えません。
料理の出す順番も考えられ、その上質問をすれば即座に返答される食材のこだわりや知識も素晴らしかったです。

朝仕入れを行い、そこから何時間もかけて仕込みをし、そしてお客様へ料理を提供する。
本当に大変なことだと思います。
今まで単純に”美味しい”しか思わなかった自分が恥ずかしくなりました。

お店の方の師匠の言葉ですが「心は形を表す」という通り、手を抜くとすぐに料理に出るそうです。
だからちょっとしたことでも手が抜けないと言われておりました。
料理は本当に奥が深い！

そんな料理屋さんのお手伝いが出来て、一不二として幸せな限りです。
もちろん料理屋さんだけでなく、ご家庭でも言えることだと思います。
料理は愛情、といいますが、一手間加えるだけで味が変わりますからね。
最高の料理となる為に最高の器を添えたいものです。

これからも一不二は料理をする方を応援し続けていきますので宜しくお願いします。
ちなみに、当店は和食器屋ではありますが、調理道具の手配可能です。
その上、今後はホテルの椅子等も手配可能になりましたのでもし新店オープンする際は一言声をかけて頂けたらと思います。

【新商品】木質の蓋付き煮物椀

今日の新商品はこちら。

木質の蓋付き煮物椀です。

お椀は汁物だけではありません。
煮物椀は陶器だけでなく、漆器もあります。
漆器だからこそ表現できる細やかな表現があります。
細かく色を吹き付けた煮物椀は１つどうでしょうか。

 

というのも、煮物椀はあんまり選ばれませんのでアピールしてみました（笑）
ご家庭で使われず、料理屋さんでも陶器はともかく、漆器で使われているところは少ないのではないでしょうか。

それでも当店にはたまに購入される方の為にいくつか種類をおいています。
ぜひご検討をお願い致します。
