【お知らせ】昨夜の築地場外の火事発生に伴う当店の営業について

おはようございます。
昨夜は築地場外の火事により、ご心配のご連絡を多数頂きありがとうございました。
当店は通常通り営業しております。

不幸中の幸いでけが人がいなかったのでよかったと思いますが、改めて火事の恐ろしさを感じました。
料理をする方と火元は切っても切れない関係があります。
皆様も火事には十分お気をつけください。

螺旋階段上の5段もある為色々な種類の料理を乗せられますね。

最近ではガラスに漆を塗った盛器など作っています。

【新商品】緑と金の刷毛のお椀（木質）

先日、当店と付き合いの長い【鮓　ふじなが】さんが来店されました。
少し話せる時間があったのですが、既に年内は予約が埋まっており、連日キャンセル待ちの連絡が入っているそうです。
まだ8月に入ったばかりなのに5ヶ月も予約が入っているってすごいですね。
当店も毎日お客様の来店予約で一杯にしたいところです。
まぁ特に予約の意味はありませんけどね（笑）

【お客様のご紹介】新座　玉寿司（フレンチと和のコラボレーション編）

今日は当店と長い付き合いがあるお客様で、新座市にある玉寿司様のご紹介です。

先日ご紹介したフレンチと寿司のイベントに当店の美熟女さんが行ってきました。

メニューも見た目も美味しそうなコースですね。

以下は当人からの食レポです。

 

①＜ボタン海老＞
絶品です。和洋が本当に良く融合されていていい表わせないです。
ボタン海老の甘みにほのかに香る昆布風味が和なのに、
エビに包まれてるペーストが洋食でとても美味しかったです。
 
②＜鮎＞
稚鮎フリットはカラッと揚がりほんのり塩味スープに付けて
食すると稚鮎の苦味がまろやかになり、メロン風味が口に
広がる冷スープで細かく刻まれた胡瓜の食感がアクセントになり
サッパリした一品でした。
 
③＜神戸牛＆ウニ軍艦＞
神戸牛ミディアムレアの牛たたきで単体で食しても良いお肉です。
口の中で脂が溶け、ほんのり肉の甘みが残ります。
ウニは生臭さが全く無いクリーミーな物。
この食材を一緒に食すと素材の甘みが口に広がり溶け、
軍艦のシャリと海苔と最後に牛の赤身が残り
神戸牛本来の味が楽しめます。
 
④＜玉子＆トリュフ＞
甘めの厚焼き玉子焼きに風味が良いトリュフの香りが
楽しめる贅沢玉子焼きでした。
 
⑤＜アワビ＞
厚い蒸しアワビに肝ソースが良く絡み、絶品でした。
 
⑥＜穴子＆フォアグラ＞
こってり好きにはたまらない一品。
厚く大きく脂が有る穴子とフォアグラのコッテリが凄いです。
甘めに炊いた大根の煮付けが更にコッテリを倍増させてくれます。
 
⑦＜握り＞
口の中で溶ける新イカがとても美味しいです。
どのお寿司も丁寧な仕事をされてる上品なお寿司でした。
 
⑧＜デザート＞
女将さんが前夜桃の皮を剥かれていた桃。
丸ごと使用されたコンポートで桃の硬さが有るのに
汁が種まで染みているほんのりワインの風味が残って驚かされました。
⑨＜生ハム＞
コースとは別に頼んだ一品です。
洋食屋さんの生ハムより厚く、塩味が控えめでワインと合っていました。

長文の食レポにはなりますが、それだけ興奮して美味しかったのでしょう。
羨ましいです。
今回のようなイベントが今後して頂けるのであれば行ってみたいですね。

【新商品】有田焼のミニカップ（ピンクと茶色）

有田焼のミニカップです。

ピンクと茶色の2種類あります。
ピンクは外も内もピンクで可愛らしいですね。
茶色は外側が黒でダンディな雰囲気があってかっこいいです。

【新商品】金色に輝く桜のタンブラー（常滑焼・磁器）

今日の新商品はこちら。

常滑焼きの金色に輝く桜のタンブラーです。
こちらの見た目はとても派手ですよね。
撮影者が写り込んでしまうほど輝いています。

ちなみにこちらは磁器になります。
常滑焼といえば急須ではありますが、実はそれ以外に明治時代から輸出用に磁器製品を作っているそうです。

 

金色の為洗浄機は使えませんが、大事に使っていける逸品と思います。
プレゼントとしてもいいかもしれませんね。

こちらも先週のショールームで一目惚れして仕入れることにしました。
素晴らしい芸術品ですね。
しばらく眺めていても飽きません。

江戸切子は1834年からの始まりと言われ、天災等がありましたが未だに引き継がれている歴史ある技術力があります。
また特徴として着物でよく使われるような身近な和の文様を繊細に切子をしています。

津軽びいどろの酒器セットと箸置きです。
以前から興味はありましたが、先日のショールームを見にいき、ついに津軽びいどろを入荷しました。
やっぱりカタログとは違いますね。
実物を見たら欲しくなってしまいました。

 

津軽びいどろは四季を感じさせてくれるハンドメイドのガラスです。
津軽の職人が1つ1つ丁寧に作り上げています。
津軽びいどろの歴史は1977年からと浅いのですが、色の調合や高い技術力により青森県伝統工芸品として認められています。

色の出方が1つ1つ違う為、じっくり選んで頂けたらと思います。

【お客様紹介】鮨　結　銀座（Sushi Yui Ginza)

昨夜は予告通り「鮨　結　銀座」へお邪魔してきました。

銀座5丁目にある高級寿司店です。
一不二の器ばかりのお店です。有田焼が特に多いです。

何度か伺っていますが、味はもちろんのこと、器の使い方がとても素晴らしいです。
料理と一体感があり、お客様によって器が違う為寿司1つとっても見え方が変わります。
とても料理の表現力のある料理屋さんです。

またいつ行ってもメニューが四季によって変わっている為飽きません。
何度行ってもお客様を飽きさせないという点は一不二と共通している点ですね。

今回も料理の写真を撮らせて頂きましたのでぜひご覧ください。
当店にある器が映ってます。

ただ鰯の握りは撮り忘れました。
ごめんなさい。
醤油のジュレが載っていて写真を撮るより食欲が勝ってしまいました。
でもそれほど見た目も味も美味しかったのです。

ぜひ行って頂きたいおすすめのお店です。
ランチ営業もしています。
水曜日は休日なので気をつけてくださいね。
